The purpose of the stainless steel perforated plate is to retain the pancreas in the lower part of the digestion chamber during the pancreas digestion process. This progressively filters the islet cells that are released from the pancreas. As opposed to wire meshes, perforated plates minimize shearing and cell trapping as the cells pass through the openings.
